I created this all on my own...and it's actually good. Colin even LOVED it (MIRACLE!)
1 box - Near East long grain & wild rice (original)
1 can - Cream of mushroom soup (maybe you could sub in cr. of celery if you want)
1/2 - 3/4 of soup can of milk
2 cups - Trader Joe's Organic Foursome (peas, corn, julienned carrots, fancy green beans)
3/4 cup - French's french fried onions
Mix cooked rice with soup, milk, veggies and FF onions, bake in casserole dish (I used 1.5 quart) covered for 15 minutes and then uncovered until bubbly and crusty on top (approx. 15 minutes) at 375 degrees.
Salt & pepper to taste after baking. (the crusty top is the most flavorful).
*For meat eaters, you could add in some shredded chicken or turkey before baking.
